Shopify - server locations are based in the USA with the Content delivery network based in the UK to speed up the delivery.
Stripe - their payment gateway <https://stripe.com/gb/legal/privacy-center> stipulates that the information is processed in the UK.
Transport Partners - server locations are based in the UK.
